What kombucha is

Kombucha is tea fermented by a SCOBY (Symbiotic Culture of Bacteria and Yeast), a symbiotic colony of acetic acid bacteria (Gluconacetobacter, Acetobacter) and yeasts (Saccharomyces, Zygosaccharomyces). Fermentation lasts 7-14 days and produces:

  • Animal models: improvements in metabolic markers, liver protection, glucose reduction
  • Humans: very few controlled clinical trials. A 2024 RCT (Kapp & Sumner) in prediabetics showed a reduction in fasting glucose with 240ml/day over 4 weeks

The honest take: most kombucha claims extrapolate from in vitro or animal data. The probiotic benefits depend on the kombucha containing live microorganisms (not pasteurized).
